Take your blades beyond sharp. Every knife is carefully assessed before sharpening to determine the blade’s condition and the proper starting grit. We begin at a lower grit when needed, then progressively work through finer grits before finishing on a 6,000-grit wetstone. The result is an exceptionally sharp, polished edge with precision and performance you can feel. Sharpness that would make even a Japanese chef jealous.
